4 egg yolk
130 grams of sugar
200 grams of whipping cream
400 grams of milk
1 teaspoon of vanilla extract

In small bowl put in egg whites one at a time to throw away in sink lifting up cap
Add egg yolks in large bowl
Add in sugar and mix smooth by hand
Add in cream and mix slowly
Once liquid, add in milk mix and then add In vanilla
Make sure there is no deposits
Pour in mixture into gelato machine leaving any deposits into the bowl
Set a timer for 40 MINUTES
Put in glass gelato container into freezer for serving



460 grams fruit
140 grams sugar
1.5 lemons squeezed

Pulp the fruit in ninja mixer until completely smooth.
Add sugar and add lemon and mix once again.
 Put in gelato maker and set timer for 40 minutes
 meanwhile put the glass container in freezer and serve once done


- 1 egg white
- 260g lemon juice (~ 6 lemons)
- 100g sugar
- 1/2-1 cup water

Foam the egg white with the electric whip
Add sugar and mix then add juice
