2.5 cups riso carnaroli
5 cups water, or slightly more like 5.5
2 teaspoon better than bouillon chicken and 1 bag of bone broth
1/2 onion diced
2-3 sausages without skin
1/2 a cup of red wine
1 bag zafferano
2 slices of Monterey cheese diced
Boil water and add broth+ bouillon in a pot
Meanwhile in the instant pot in SAUTÉ mode melt 1 tablespoon of butter and some oil, add onions.
When onions are translucent add the sausage and break it in small pieces.
When sausage is well browned add rice and toasted well, it needs to become translucent
Then add wine and scrape well the bottom of instant pot
Add the boiling broth to the rice give a good stir and close the lid
Press OFF, then press MANUAL and press + or - to set to 7min
Make sure instant pot vent is closed
Once 7 min are over open the vent , when all vapor is off open the lid.
Give a good stir and add zafferano and Monterey cheese
Remove pot from the instant pot, keep a lid on and let it rest for 1-2 min
